Mallorcan Arròs Brut Rice

Ingredients for two people:

• 300 grs. Chicken
• 300 grs. Pork chops
• 1 onion
• 1 cluster tomato, peeled.
• Saffron
• ¼ teaspoon of “four spice”
• Black pepper
• 1 cup of rice per person
• 2 litres water
• 100 grs. of peas
• 100 grs. of green beans
• 1 green pepper or small radishes for garnish.

Optional: Red Pine mushrooms (Lactarius deliciosus, L. sanguifluus), artichoke, snails, etc.

 

Mallorcan Arròs Brut Rice 

Preparation:

Chop and sauté the meat and onion and tomato in a pan over a medium heat.

Once softened and before the onion burns, add the water, four spice, salt and pepper and allow to simmer over a medium heat for 30 minutes.

Add the peas, chopped green beans and saffron to the stock. After 5 minutes add the rice. We can also add “esclata-sangs” (Red Pine mushrooms) or artichoke or snails according to the season.

Let the rice cook. The dish is a rice soup, so ensure there is enough water, if too much evaporates add some more. Once the rice is cooked serve in large bowls with radishes or strips of green pepper.
