Ingredients for 4 people:
• 3 aubergines • 4 green peppers • 4 red peppers • 4 medium-sized potatoes • 1 kg. ripe tomatoes • 4 cloves of garlic • 3 dl. olive oil
Type of recipe: Starters, Vegetables.
Cut the aubergines, salt them and leave them in a colander for one hour.
Wash the peppers, remove their seeds and cut them into strips.
Peel the tomatoes and garlic and finely chop them, keeping them separate.
Peel the potatoes, cut them into thick slices and wash them.
Fry the potatoes, season them and place them in a pan.
Fry the aubergines, strain them and place them on top of the potatoes.
Fry the peppers over slow heat, strain them and place them on top of the aubergines.
For the sauce
Heat the oil and brown the garlic, add the tomato.
When you have a thick sauce, pass it through the colander and spread it over the vegetables.
