Puff pastry with sobrasada-escalibada filling, Koldo Royo

Ingredients for 4 people:
• 4 puff pastry rings • 100 g Sobrasada • 300 g Escalivada • 100 g cleaned and sauteed mixed mushrooms • Grated orange peel • 30 g grated Maonès cheese • White wine • Cream • Salt and pepper • Garden cress

Koldo Royo recipe

 

This recipe is easy to prepare and can be cooked with natural products that have been ecologically grown in Mallorca.

 

Preparation

Fry the Sobrasada lightly in a pan, then add the grated cheese, the orange peel and finally the wine and let it reduce. Now introduce the escalivada, prepared earlier using the sliced onion, red, green and yellow peppers and aubergines. Add the cream and let it simmer. When it starts to thicken, add the mushrooms and season with salt and pepper.

Put half of the puff pastry (pre-baked at 180o in the oven) on the plates. Puff pastry made with butter works better, as it is finer. Spread the filling on top, add some cress to give it a slightly sour flavour and finally cover it with the other half of the puff pastry.
Enjoy this dish with a glass of red Mallorcan wine.
