Since 1931, the José Luis Ferrer winery has produced some of the island’s best wines within the Binissalem designation of origin. Their red Reserve, made from Mantonegro and Cabernet Sauvignon grapes, is one of the favourites of the region.

José L. Ferrer Reserva wine features an intense ruby red color and a brilliant appearance. It preserves the primary aromas of citrus, vanilla, dairy notes, oaky coconut, clove, and spices, all perfectly integrated into a carefully crafted blend. It is velvety on the palate, highly balanced, and pleasant, with a long, lingering finish that brings back the aging aromas, notably licorice.

Subjected to a 21-day fermentation and maceration process in stainless steel tanks, it is aged for 14 months in barrels and at least 23 months in the bottle before release.

It can be enjoyed over the next five years when served at a temperature of 18ºC, and must be stored in suitable conditions that do not exceed this limit. From the José Luis Ferrer winery in Binissalem, the current director and grandson of the founder, José Luis Roses, shares insights into its production.

 

His grandfather was one of the few Mallorcan winemakers who believed in his project after the crisis. Does it take a lot of passion to dedicate oneself to wine production?
Wine creates passion among both producers and consumers. As a producer, it is highly rewarding to participate in the entire winemaking process, which begins in the soil and ends in the bottle.

What does producing a good wine depend on?
It depends on the soil, the care of the vineyard, the weather conditions, and meticulous craftsmanship in the winery.

What is the most complex part of the process?
The treatment of the vineyard. Producing our own grapes is a very important agricultural task that requires finding the right balance between quality and quantity.

What sets your wines apart from the rest?
Our grape variety and our quality. We look for a differentiating element, a personal touch. Furthermore, I believe we produce the best Mantonegro wines.

How do you combine tradition and technological advancement in such a demanding sector?
The cutting-edge technology continues to be the traditional oak barrels. The greatest leap in quality has been the incorporation of physical treatments for temperature and fermentation control.

What is your opinion on organic farming?
It is very interesting, especially in the Mediterranean region, where the weather conditions are excellent. We already have an organic vineyard.

What is the international presence of your wines?
We have a significant presence in Germany, Austria, Korea, Japan, and the United States. We export around 100,000 bottles per year.

Is competition stronger on the mainland?
Yes, mainly because the island provides a great showcase for introducing our products to the foreign market.

What is the best pairing for a good wine?
It all depends on the occasion, although I could suggest a Mallorcan roast suckling pig or a lobster stew.
