Ingredients for 4 people:
600g of sea bass – 2 leeks – 100g ground almond – 1 bunch of spinach – 30g pine nuts – 30g sultanas – Salt and pepper
To make the sauce
Pine nuts – Olive oil Mallorca
Begin by seasoning the fish, and frying each side in a pan with a small amount of olive oil.
Next we dust the fish with the ground almond, and put it under the grill for a few minutes.
Meanwhile, we sauté the leeks, the spinach (which we have chopped and blanched), half the pine nuts and the sultanas, and leave them to soften for a few minutes on a low flame. We also brown the rest of the pine nuts.
A slice of fish, accompanied by the spinach, with the sultanas and pine nuts evenly spread across the plate.
