{"id":27158,"date":"2020-02-24T11:37:41","date_gmt":"2020-02-24T10:37:41","guid":{"rendered":"https:\/\/www.masmallorca.es\/places-of-special-interest\/berenjenas-rellenas-a-la-mallorquina.html"},"modified":"2020-02-25T10:11:00","modified_gmt":"2020-02-25T09:11:00","slug":"stuffed-aubergines","status":"publish","type":"post","link":"https:\/\/www.masmallorca.es\/en\/gastronomy\/stuffed-aubergines.html","title":{"rendered":"Stuffed Aubergines"},"content":{"rendered":"\n<p>This vegetable is irreplaceable in Mallorca\u2019s traditional recipe book and is the main ingredient in <strong>one of our most typical dishes<\/strong>: meat stuffed aubergines, known as \u201cberenjenas a la mallorquina\u201d.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p><strong>Cati Pon\u2019s recipe for stuffed aubergines<br><\/strong>Cati Pons is the chef at a takeaway food restaurant, she prepares the stuffed aubergines as her grandma did at the beginning of the last century, the recipe is as follows:<\/p>\n\n\n\n<p><strong>Ingredients:<br><\/strong>4 aubergines, 1 onion, \u00bd kilo minced meat, 1 egg, biscuit crumbs, tomatoes, potatoes, marjoram, 2 cloves of garlic, bay leaf, <a href=\"https:\/\/www.masmallorca.es\/gastronomia\/aceite-de-mallorca.html\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\"olive oil (opens in a new tab)\">olive oil<\/a>, salt and pepper.<\/p>\n\n\n\n<p><strong>Preparation:<br><\/strong><em>The aubergines:<\/em> Cut them into two equal halves, longways, boil over a medium heat until the flesh is soft. <\/p>\n\n\n\n<p><em>Stuffing<\/em>: Saut\u00e9 the chopped onion with a bit of salt. When it starts to go golden add the minced meat, stirring constantly to make sure it breaks up completely. Season and add the marjoram. Add the raw egg and stir will. Pre-heat the oven to 180\u00aa, stuff the aubergines, cover with biscuit crumbs and bake for 15 minutes.<\/p>\n\n\n\n<p><em>Tomato sauce:<\/em> Saut\u00e9 the chopped tomatoes, add two cloves of garlic, the bay leaf and season. Cover the aubergines with the sauce and dish up.
