For the stuffing:
<\/strong> \u2022 Breadcrumbs
\u2022 Toasted ground pine nuts
\u2022 Toasted ground Majorcan almonds
\u2022 Chopped parsley..<\/p>\n\n\n\n\n\n\n\n

\u2022 Diced tomatoes<\/a>, roasted with salt, oil, garlic and sugar
\u2022 Lightly toasted saffron
\u2022 Ground clove
\u2022 Garlic confit
\u2022 Salt
\u2022 Pepper
\u2022 Small chopped raisins
\u2022 Tap de Corti paprika<\/a><\/p>\n\n\n\n

Other ingredients:
<\/strong> \u2022 Fish: Hake, cod, sea bass\u2026
\u2022 Olive oil
\u2022 Garlic
\u2022 Water
\u2022 Salt
\u2022 Confit potatoes (with garlic and oil)
\u2022 1 Orange
\u2022 Black wine caramel (reduction of wine and sugar)<\/p>\n\n\n\n

For the filling: <\/strong>in a pestle and mortar combine the salt, pepper, clove, saffron and garlic confit.<\/p>\n\n\n\n

Add the remaining ingredients to obtain a juicy filling.<\/p>\n\n\n\n

Clean the fish, cut down the middle, salt and stuff, coat the fish with the stuffing too.<\/p>\n\n\n\n

For the sauce:<\/strong> vacuum pack the fish bones and skin with a splash of water, 2 cloves of garlic, and a slug of olive oil, steam for one hour and strain. <\/p>\n\n\n\n

Using a stick blender and adding some olive oil make a mayonaise with this mixture. Add orange juice and zest.<\/p>\n\n\n\n

Sprinkle olive oil over the fish and roast at a high heat for a few minutes.<\/p>\n\n\n\n

Plate up the sauce, fish, confit potatoes, tomato and red wine caramel.<\/p>\n\n\n\n
