By Santi Taura<\/figcaption><\/figure>\n\n\n\n<p><strong>For the filling: <\/strong>in a pestle and mortar combine the salt, pepper, clove, saffron and garlic confit.<\/p>\n\n\n\n<p>Add the remaining ingredients to obtain a juicy filling.<\/p>\n\n\n\n<p>Clean the fish, cut down the middle, salt and stuff, coat the fish with the stuffing too.<\/p>\n\n\n\n<p><strong>For the sauce:<\/strong> vacuum pack the fish bones and skin  with a splash of water, 2 cloves of garlic, and a slug of olive oil, steam for one hour and strain. <\/p>\n\n\n\n<p>Using a stick blender and adding some olive oil make a mayonaise with this mixture. Add orange juice and zest.<\/p>\n\n\n\n<p>Sprinkle olive oil over the fish and roast at a high heat for a few minutes.<\/p>\n\n\n\n<p>Plate up the sauce, fish, confit potatoes, tomato and red wine caramel.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"683\" height=\"1024\" src=\"https:\/\/www.masmallorca.es\/wp-content\/uploads\/2020\/01\/pescado-fra-roger-santi-taura-plato-683x1024.jpg\" alt=\"Pescado \u201ca lo Fra Roger\u201d, relleno y al horno.
