Anschlie\u00dfend abgie\u00dfen und nochmals kochen. Wenn der Fond zu kochen beginnt, den Maniokfond hinzugeben, bei niedriger Flamme k\u00f6cheln lassen bis er dickfl\u00fcssig wird und anschlie\u00dfend kalt stellen.<\/p>\n<p align=\"justify\">\n<p><strong>F\u00fcr die Mahon\u00e9sk\u00e4sesauce:<\/strong><\/p>\n<p align=\"justify\">75 g Mah\u00f3nk\u00e4se, 150 ml Wasser kochen, die Wassertemperatur mit einem Thermometer kontrollieren und es kochen lassen bis 60\u00ba C. Erreicht werden den geriebenen K\u00e4se beimengen und die Sauce vom Herd nehmen, die Mischung in einen Mixer geben und 24 Stunden lang im K\u00fchlschrank kalt stellen.<\/p>\n<p align=\"justify\">\n<p><strong>Serviervorschlag:<\/strong><\/p>\n<p align=\"justify\">Die Garnelen salzen und in einer hei\u00dfen Pfanne kurz mit ein wenig Oliven\u00f6l anbraten. Die gebratenen Garnelen in der Tellermitte mit Apfel und Traubenw\u00fcrfeln anrichten.
