Ihr Anbau hat lange Tradition auf dem Lande Mallorcas und ihre Benutzung in der K\u00fcche war schon bei den Griechen und R\u00f6mern \u00fcblich. Gerade die R\u00f6mer waren echte Spezialisten im W\u00fcrzen von Fisch- und Fleischgerichten mit Kapern.<\/p>\n\n\n\n<!--more-->\n\n\n\n<div class=\"wp-block-image\"><figure class=\"alignleft size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"250\" height=\"333\" src=\"https:\/\/www.masmallorca.es\/wp-content\/uploads\/2020\/10\/alcaparras-3.jpg\" alt=\"Die Kapern, Mallorca\" class=\"wp-image-27923\" srcset=\"https:\/\/www.masmallorca.es\/wp-content\/uploads\/2020\/10\/alcaparras-3.jpg 250w, https:\/\/www.masmallorca.es\/wp-content\/uploads\/2020\/10\/alcaparras-3-225x300.jpg 225w\" sizes=\"(max-width: 250px) 100vw, 250px\" \/><\/figure><\/div>\n\n\n\n<p>Die Kaper ist <strong>weder eine Frucht noch ein Samenkorn<\/strong>, sondern die Knospe einer Pflanze, die auf der Insel unter dem Namen <em>Taparera<\/em> bekannt ist. Ihr wissenschaftlicher Name ist <em>Capparis spinosa<\/em> und sie f\u00e4llt in die Gattung der Str\u00e4ucher mit mehreren Jahreszyklen, die im Winter vertrocknen und nur als tiefe Wurzel fast ohne \u00c4ste \u00fcberleben.<\/p>\n\n\n\n<p>Ihre Ernte war schon immer eine der h\u00e4rtesten Feldarbeiten auf Mallorca. Die Pflanze ist gestr\u00fcppartig und die Kapern liegen dicht am Boden, weshalb sie in der Hitzezeit von Juni bis September in geb\u00fcckter K\u00f6rperhaltung geerntet werden m\u00fcssen.<\/p>\n\n\n\n<p>Traditionsgem\u00e4\u00df war das eine Frauenarbeit, die im Morgengrauen zu Beginn des Tageswerks ausgef\u00fchrt wurde. Dieser Prozess ist einfach und damit k\u00f6nnen sie als Zutat in Salaten, Saucen oder aller Art von Gerichten benutzt werden.<\/p>\n\n\n\n<p>L\u00e4sst man die Knospe wachsen, entwickelt sich daraus eine dicke Bl\u00fcte mit vier wei\u00dfen Bl\u00fctenbl\u00e4ttern. Die daraus entstehende Frucht wird <em>Taperot<\/em> (Kapernbeere) genannt und kann auch in Essig eingelegt werden, ist aber kommerziell kaum bekannt. \u00c4hnliches gilt f\u00fcr die Bl\u00e4tter des Kapernstrauchs, die hervorragend zum Dekorieren vieler Gerichte geeignet sind.<\/p>\n\n\n\n<p>Jetzt wird dieses Produkt gef\u00f6rdert und die Ernten steigen.
