Incorporar al brou la pastanaga trossejada, la ceba, el julivert i els fils de safr\u00e0. Deixar coure el brou a foc suau durant una hora, colar el brou i posar-lo altra vegada sobre el foc, quan el brou comenci a bullir, incorporar el fons neutre de tapioca. Coure a foc suau fins que el brou adquireixi una consist\u00e8ncia m\u00e9s o menys densa. Reservar fins que estigui fred.<\/p>\n<p>\n<strong>Per al s\u00e8rum de formatge maon\u00e9s: <\/strong><\/p>\n<p align=\"justify\">Ratllar els 75 grs. de formatge maon\u00e9s, posar a escalfar 150 mls. d&#8217;aigua, controlar la temperatura de l&#8217;aigua amb l&#8217;ajuda d&#8217;un term\u00f2metre i escalfar fins a 60\u00ba C. Incorporar el formatge ratllat i retirar del foc. Triturar amb un turmix la barreja d&#8217;aigua i formatge. Deixar reposar 24 hores al frigor\u00edfic. <\/p>\n<p>\n<strong>Presentaci\u00f3: <\/strong><\/p>\n<p align=\"justify\">Condimentar les cues de les gambes amb un poc de sal, marcar les gambes en una planxa calenta amb un poc d&#8217;oli d&#8217;oliva, disposar en el centre del plat les gambes marcades amb uns daus de poma golden i de ra\u00efm, posar sobre les gambes unes cullerades de brou de gamba lligat, \u00e9s important que la temperatura del brou sigui t\u00e8bia.
