Oli i sal i res pus. Res pus.<\/p>\n<p><!--more--><\/p>\n<p style=\"text-align: justify;\"><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-3251 size-full\" style=\"border: 0px none; margin: 30px 20px 30px 0px; float: left;\" title=\"Tramp\u00f3\" src=\"https:\/\/www.masmallorca.es\/wp-content\/uploads\/2009\/10\/trampo_2.jpg\" alt=\"Tramp\u00f3\" width=\"300\" height=\"220\" \/><\/strong><\/p>\n<p style=\"text-align: justify;\">\u00a0<\/p>\n<p style=\"text-align: justify;\">Tot la resta que s\u2019hi posi, o li llevin, s\u00f3n variacions ap\u00f2crifes sobre el mateix tema. Que admet afegitons, tants com es vulguin, per\u00f2 ja no \u00e9s tramp\u00f3 de bon de veres. Que si sa padrina hi posava poma, va b\u00e9; que si un parell d\u2019olives o t\u00e0peres o fonoll mar\u00ed o patates bullides, ciurons, mongetes, b\u00e9!&#8230;; que si una llauneta de tonyina, ja no tan b\u00e9, i no en parlem d\u2019afegir-hi altres barbaritats, com aquestes banderilles d\u2019envinagrat: aix\u00f2 no \u00e9s tramp\u00f3, \u00e9s com la sangr\u00eda que donen als guiris per devers la vorera de la mar.<\/p>\n<p style=\"text-align: justify;\">\n Hav\u00edem quedat en qu\u00e8 la mescla havia de ser harm\u00f2nica i proporcionada. Primer les quantitats. Molta dom\u00e0tiga, molt menys prebe i, encara menys, ceba. Les qualitats dels ingredients s\u00f3n el m\u00e9s important. Els prebes, han de ser d\u2019un verd blanquin\u00f3s, un poc sucosos, la ceba, mallorquina, blanca i tendra, la forastera \u00e9s massa coventa, massa potent, \u201cmata tot lo altre\u201d.<\/p>\n<p style=\"text-align: justify;\">\n <img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-3256 size-full\" style=\"margin: 10px 0px 10px 20px; float: right;\" title=\"Tramp\u00f3\" src=\"https:\/\/www.masmallorca.es\/wp-content\/uploads\/2009\/10\/trampo_3.jpg\" alt=\"Tramp\u00f3\" width=\"300\" height=\"212\" \/><\/p>\n<p style=\"text-align: justify;\">\u00c9s, per tant, una condici\u00f3 pr\u00e8via al tramp\u00f3 saber-ne triar els elements. I obrar-los b\u00e9. El tramp\u00f3, com determinats aguiats mariners, es feia r\u00e0pidament i sense gaire concessions a les presentacions, \u00e9s per aix\u00f2 que no discutirem molt si la tom\u00e0tiga va b\u00e9 que sigui, o no, pelada. El tema de llevar-li les llavors, alg\u00fa ho troba convenient, alg\u00fa altre creu que el l\u00edquid que les enrevolta forma part del suquet necessari a l\u2019harmonia del resultat final. El prebe, ben net, obligat\u00f2riament sense llavors, els m\u00e9s puristes diuen que esbocinat amb les mans, que no toqui ganivet i la ceba, tallada de per llarg, no es pot admetre un tramp\u00f3 amb la ceba tallucada i picadeta: una mica de serietat amb les coses de menjar!<\/p>\n<p style=\"text-align: justify;\">\u00a0<\/p>\n<p style=\"text-align: justify;\"><strong><img loading=\"lazy\" decoding=\"async\" class=\"alignleft wp-image-3261 size-full\" style=\"margin: 10px 20px 10px 0px; float: left;\" title=\"Tramp\u00f3\" src=\"https:\/\/www.masmallorca.es\/wp-content\/uploads\/2009\/10\/trampo_4.jpg\" alt=\"Tramp\u00f3\" width=\"300\" height=\"227\" \/><\/strong><strong>Trempar<\/strong><br \/>\n Trempar, en mallorqu\u00ed, vol dir mesclar i condimentar, principalment l\u2019enciam, l\u2019end\u00edvia\u00a0 o altres mescles de verdura com el tramp\u00f3 o el farcit dels cocarrois. Tamb\u00e9 es trempa la carn de les panades o el \u201cpast\u00f3\u201d abans d\u2019omplir les sobrassades. Ho he sentit aplicat a afinar b\u00e9 un instrument musical, trempar les xeremies i a posar al bon punt aigua calenta i freda, trempar l\u2019aigua. Per als catalans, trempar, \u00e9s, avui en dia, sin\u00f2nim d\u2019enravenar. La trempera matinera, que no \u00e9s trempera vertadera i tot aix\u00f2. A algunes comarques per\u00f2, trempar i amanir conviuen. Per tant si trempar vol dir mesclar, remenar, combinar i condimentar aquesta \u00e9s una altra de les accions seq\u00fcencials de la construcci\u00f3 d\u2019un bon tramp\u00f3.<\/p>\n<p style=\"text-align: justify;\">\u00a0<\/p>\n<p style=\"text-align: justify;\">Dom\u00e0tiga, prebe verd, ceba, sal i oli. O oli i sal? Quin \u00e9s l\u2019ordre prevalent? I no s\u00f3n q\u00fcestions tangencials, en el pa amb oli el fet de posar primer l\u2019oli i despr\u00e9s la sal, pot esgarrar tota l\u2019arquitectura pr\u00e8via: primer la sal i despr\u00e9s l\u2019oli. En el tramp\u00f3 es recomana primer la sal i despr\u00e9s l\u2019oli, per\u00f2 aix\u00ed com passa en els plats aguiats, es pot rectificar. No s\u00b4ha d\u2019abusar. Ha de quedar humit, per\u00f2 no hi han de nedar, els ingredients.<\/p>\n<p style=\"text-align: justify;\">\n Alerta, per tant , amb l\u2019oli i, un oli verjo amarga massa el tramp\u00f3, amb un bon oli d\u2019oliva, n\u00b4hi ha m\u00e9s que a bastament.<br \/>\n Ja est\u00e0? Ni d\u2019un bon tros! Queda com dur-ho a la boca. Aix\u00f2 de menjar el tramp\u00f3 amb forqueta i plat individual \u00e9s una cursilada de panesillo ciutad\u00e0. El tramp\u00f3 \u00e9s menja dins un \u00fanic plat, col\u00b7locat enmig de la taula i amb un tros de pa i els dits que fan d\u2019agafatall.
