By Santi Taura<\/figcaption><\/figure>\n\n\n\n<p><strong>Per al farciment:<\/strong> dins un morter, posar la sal, el pebre, el clau, el safr\u00e0 i els alls confitats amb oli, aconseguint aix\u00ed una pasta\u00a0especiada\u00a0i potent.<\/p>\n\n\n\n<p>Ajuntar amb els altres ingredients i provar de sal, ha de quedar un farciment humit i suc\u00f3s.<\/p>\n\n\n\n<p>Netejar el peix, proporcionar, fer un tall per la meitat, salar i emplenar, acabar empanant el peix pel seu voltant amb el farciment. <\/p>\n\n\n\n<p><strong>Per a la salsa:<\/strong> Amb les espines i les pells farem la salsa; envasar-los al buit amb una mica d&#8217;aigua, 2 grans d&#8217;all i una mica d&#8217;oli d&#8217;oliva. <\/p>\n\n\n\n<p>Coure en&nbsp;<em>roner&nbsp;<\/em>o en vapor uns 70 graus durant una hora. Passat aquest temps, obrir la bossa i colar el resultat. Muntar amb un&nbsp;<em>t\u00farmix<\/em>&nbsp;el resultat i anar afegint oli d&#8217;oliva, fins que quedi com una maionesa suau.<\/p>\n\n\n\n<p>Posar b\u00e9 de sal i amanir amb&nbsp;ratlladura de taronja i suc de taronja, s&#8217;ha de notar, per\u00f2 ha de ser subtil. <\/p>\n\n\n\n<p>Col\u00b7locar el peix en una safata de forn, posar una mica d&#8217;oli d&#8217;oliva damunt i rostir a forn fort uns minuts, fins que el peix estigui bullit, per\u00f2 sense que es passi. <\/p>\n\n\n\n<p>Afegir la salsa de taronja en la base del plat, el peix damunt i decorar amb les patates confitades, el tom\u00e0quet i uns punts de caramel de vi negre.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"683\" height=\"1024\" src=\"https:\/\/www.masmallorca.es\/wp-content\/uploads\/2020\/01\/pescado-fra-roger-santi-taura-plato-683x1024.jpg\" alt=\"Pescado \u201ca lo Fra Roger\u201d, relleno y al horno.
